Groovy Coconut SlimCado Pie
Groovy Coconut retains its distinct flavor while accenting the great Slimcado taste. Using fresh coconut requires more sugar than processed shredded coconut (which has sugar added to it). Whatever you choose, fresh or processed, taste the batter and add sugar as desired.
- 1/3 cup coconut milk
- 1 2.5 oz envelope gelatin
- 1 tsp coconut extract
- 1 lime
- 1 SlimCado avocado
- 2/3 cup sugar (if fresh coconut, 1/2 cup if using processed shredded coconut)
- 1/2 cup shredded Groovy Coconut
- 1 graham cracker piecrust
In a medium saucepan on medium-high heat, heat the coconut milk. Stirring, slowly add the gelatin. Keep stirring until the gelatin is totally dissolved. Stir in the coconut extract and the juice from the lime.
Cut the SlimCado in half, discard the seed, and scoop out the flesh into a large bowl. Mash.
Add the milk mixture and combine.
Add the sugar and coconut.
Taste and add additional sugar, if desired.
Scoop into a graham cracker crust. Layer plastic wrap on the surface. Refrigerate for at least 2 hours.
