Mushroomed SlimCado guacamole
This is hearty guacamole that would be perfect as a side or topping for meat just off the grill. The dried mushrooms and onions will plump up with great avocado taste during refrigeration.
- 1 SlimCado avocado, cut in half, seed discarded
- 1/2 oz dried mushrooms
- 1/4 cup dried onions
- 1 clove garlic, minced
- 1/2 tsp chili pepper
- 1 tsp sea salt
- 1 tsp pepper
In a large bowl, mash the SlimCado.
Add the mushrooms, onions, garlic and chili pepper. Stir to combine.
Add salt and pepper to taste.
Chill covered in plastic for at least 8 hours to let the dried mushrooms and onions plump up.
Tropical avocados, like the SlimCado, brown slowly. Still, you may find that the very top of the guacamole may have turned slightly brown because of harmless oxidation. Stir back into the guacamole just before serving.
