Power breakfast drink
In a nod to St. Patrick's day, here's a green breakfast drink that's an eye-opener both in looks and how great that green drink tastes. It's a fabulous way to start the day...nutrient rich. You can double this recipe and freeze half for another morning.
- Red or green Swiss chard, spinach, or kale - 2 cups
- Solo papaya - 1
- Coconut-flavored yogurt - 1/4 cup
- Coconut water - 1/4 cup
- ice cubes - 2
- Slice a Solo papaya in half. Discard the seeds. Scoop out the inside. Add to a blender.
- In a blender, combine all ingredients and process till smooth.
- Serve immediately
