Solo Kiwi Tomato Salad
No need for dressing; the fruit juices provide a sweet-tart topping for your lettuce. As for how to serve it, you can always cut the Solo lengthwise, but why not take a top-down approach? With a bold look that's simple to assemble, this makes a great lunch or a first course when entertaining guests.
Ingredients
- 2 cups Arugula
- 4 Solo papayas
- 2 tomatoes, diced
- 2-3 Kiwis, peeled, diced
- 2 tsp Chives, chopped
- 2 tbs Pistachios, finely chopped
- Salt and ground pepper to taste
Instructions

Cut a thin slice off the bottom of the Solos to form a base for standing the fruit. Cut off enough so that the seed cavity shows.

Slice off the top of the fruit and save for display on the plate. Scoop out the seeds from the Solo.

Spread arugula on four plates.

In a medium bowl, combine the diced tomatoes and kiwis. Add salt and pepper to taste. Spoon this combination equally into the 4 Solo cavities.

Top with pistachio chips. Serve immediately.
