Caribbean fruit bake
With just a couple of minutes under the broiler, tropical fruits like papaya, passionfruit and coconut get a bit crustier to match the gingersnap taste. It's easy to make, perfect for days that need to be made special.
Ingredients
- non-fat cooking spray
- 12 gingersnaps, crushed
- 1 cup, about 1/3 of a Caribbean Red® papaya, chopped into small pieces; discard seeds
- 1 passionfruit, cut in half, seeded middles scooped out
- 1/2 cup Groovy Coconut, shredded
- 2 limes
- 6 oz fat-free vanilla Greek yogurt
- 2 tbs honey

Preheat the broiler.

Coat 4 ramekins with cooking spray.

Divide the crushed gingersnaps evenly among the 4 ramekins. Press the gingersnaps into the ramekins.

In a medium bowl, combine the papaya pieces, seeded middle of passionfruit, coconut and the juice of 1 lime. Divide the fruit evenly among the ramekins.

Place ramekins in a shallow baking pan. Broil 6 inches from the heat for about 6 minutes.

Meanwhile, in a medium-size bowl, stir together the juice of 1 lime with the yogurt and honey.

Remove ramekins from the oven. Spread the yogurt mixture evenly among the ramekins. Serve warm.
