Uniq Fruit ambrosia
Looking for a star-studded hostess gift or a breakfast to scoop and go? This is an easy-to-make ambrosia that stays fresh in your refrigerator for up to a week. It's also a welcome side dish at lunch or dinner. I usually keep whatever liquid is left over for a new batch.
Ingredients
- 2 Uniq Fruit
- 1/4 cup dried cranberries
- 1/4 cup honey
- 1 tsp ground coriander
- 2 tbs sugar
- 1/4 cup Groovy Coconut, shredded
- 2 starfruit
Instructions

Juice 1 of the Uniq Fruit into a large bowl. Add the honey, coriander, sugar and coconut. Whisk together.

Peel the remaining Uniq Fruit. With a sharp knife, cut off any remaining white membrane. Cut across the width of the Uniq Fruit, making circles. Then slice each circle into quarters.

With a vegetable peeler, trim the ribs off the star fruit. Cut into star-shaped slices, and poke out the seeds.

Add the Uniq Fruit pieces and star fruit slices to ingredients in the large bowl. Toss gently.

Option 1: Scoop into a 24-oz. jar, arranging star fruit slices toward the outside. Put lid on.

Option 2: Cover bowl with plastic wrap.
