Caribbean tuna arugula salad
Most tuna salads are drowned with lots of mayonnaise. But you don't want to just eat tuna plain. Add a light dressing and papaya to the salad. You'll enjoy your tuna while getting a taste of the tropics. The dressing is great with tuna, salmon, and sardines, this is a versatile way to combine Caribbean Red® papaya in your entrée salad.
Ingredients
- 6.4 oz. tuna packed in wate
- 1/4 Caribbean Red® papaya
- 1/2 cup red onion, chopped
- Caribbean curried dressing
- 1/4 cup extra-virgin olive oil
- 2 limes for juicing
- 1 tbs sugar
- 1 tbs sour cream
- 1 tsp cumin
- 1/2 tsp cardamom
- Topping
- 2 cups arugula
Instructions

Drain the tuna.

Peel the papaya and discard the seeds. Chop up 1/4 of it. Reserve the remaining papaya for another recipe.

In a large bowl, combine the tuna, Caribbean Red papaya pieces, and red onion

In a small bowl, whisk together all the ingredients for the Caribbean curried dressing.
- Add the dressing to the larger bowl. Toss gently to coat. Refrigerate for at least 2 hours.

To serve, toss gently. Scoop onto bread or lettuce and top with dots of sour cream.
