Tropical chicken salad
Make a chicken salad worth crowing about by adding coconut, dragonfruit and red guava to it.
Ingredients
- 1/2 small dragonfruit
- 1 Florida red guava
- 2 tbs Groovy Coconut, shredded
- 2/3 cup precooked chicken, cubed
- 1/4 cup vanilla or plain Greek yogurt
- 1 tbs olive oil
- 1 lime
- 1/2 tsp mustard powder
- 1/2 tbs sugar
Instructions
- Cut the dragonfruit in half. With a large spoon, scoop out the white speckled interior. Cut into small cubes.

Peel the red guava. Slice into small pieces.

Extract the white coconut from its shell. Shred.

In a small bowl, combine the yogurt, olive oil, juice of 1 lime, mustard powder and sugar.

In a large bowl, combine the fruit and the chicken. Add the yogurt mixture on top. Toss gently to coat.

Cover and refrigerate at least 2 hours. Toss gently before scooping into a pita pocket, serving over lettuce or scooping into a SlimCado half.
