Chilling SlimCado Summer Soup
In every spoonful, there's a hint of the Far East wrapped around the always winning combo of SlimCado avocados and tomatoes. Grab the food processor for this soup's easy to make, even just for one. Multiply the recipe for the number of guests.
Ingredients
- 1 medium SlimCado avocado
- 1/8 cup chopped celery
- 1/8 cup chopped onion
- 1/4 cup tomato juice
- 1 tablespoon tahini oil
- 1 lime
Instructions
- In a food processor, combine the SlimCado, celery, and onion. Puree until relatively smooth (there will be small chunks).
- Add the juice of one lime, the tahini, and enough tomato juice to make the soup the desired consistency.
