Dragon avocado shortcake
Red dragonfruit and Florida avocado make a sweet salad. Enjoy by topping some lettuce with it, or treat yourself to the salad on top of a shortcake. Make it two shortcakes and it's a healthy dessert. Easy to make. Dragonfruit and the SlimCado® avocado have tastes that fit nicely together.
- 1 dragonfruit
- 1 SlimCado avocado
- 1 lime
- 1/4 cup fresh mint, chopped
- 1 tbsp sugar
- 1/4 cup vanilla yogurt
- Your choice: 1 package of 6 shortcake shells or lettuce
Slice open the dragonfruit and scoop out the insides. Chop into small pieces. Put in a medium-sized bowl.
Cut open the SlimCado avocado. Discard the seed, scoop out the interior and slice into small pieces. Add to the bowl.
Add the juice of 1 lime, mint, sugar and yogurt to the bowl. Combine with a spoon.
Refrigerate at least 2 hours.
Serve over shortcake shells or lettuce.
