Garlicky papaya
Easy breezy - Caribbean breezy, that is. Papaya and garlic are perfect together. If you're preparing a meat, poultry or fish recipe that starts with cooking some garlic and onion, double the amount and split it for the entree and for this great recipe.
Ingredients
- 3 tbs cooking oil
- 1 lime
- 2 cloves garlic, minced
- 1/2 cup red onion, chopped
- 1/2 Caribbean Red® papaya
Instructions

In a medium saucepan over medium heat, heat the oil for 3 minutes.

Add the juice of one lime and the garlic and onion; cook for 3 minutes or until the onion softens.

Peel a Caribbean Red papaya. Discard the seeds and chop half into small cubes. Reserve the remaining half for another dish.

Add the chopped papaya to the saucepan. Toss to coat. Let heat for an additional 5 minutes, stirring occasionally.

Serve warm.
