Papaya gondolier
The Caribbean meets the Mediterranean in this fun appetizer. Prosciutto and mozzarella cheese top a slice of Caribbean Red® papaya, then it's topped again with a passionfruit sauce. Don't strain the passionfruit's pulp - the seeds give a healthy crunch to this dish.
Ingredients
- 2 limes
- 1/4 cup water
- 1 tbsp sugar
- 3 passionfruit
- 1/2 Caribbean Red papaya
- 4 oz. mozzarella cheese fingers
- 12 slices of prosciutto
Instructions

1. In a small saucepan over medium-high heat add the juice of 2 limes, water, sugar and the insides of 3 passionfruit. Stir to combine. Heat for 3 to 4 minutes until thickened. Set aside to cool.2. Slice a Caribbean Red papaya lengthwise, discard the seeds and the peel. Cut off the ends and slice half-rounds about 1" thick. Place on a serving plate.
3. Put half of a piece of mozzarella cheese in the middle of a papaya slice. Wrap with a prosciutto slice. Spoon some of the passionfruit sauce over the papaya slice. 4. Serve chilled.
