Honey and ginger are my favorite condiment duo. This recipe will make enough for a dinner side and your lunch the next day.
- 1 Caribbean Red® papaya
- 1 tbs fresh mint for garnish
- Honey-ginger dressing
- 3 tbs honey
- 1 lime
- 1 tsp vanilla extract
- 1 tbs fresh mint, chopped
Cut a Caribbean Red papaya into bite-sized cubes.
In a large bowl, combine the papaya and honey-ginger dressing. Toss gently to coat.
Cover and refrigerate at least 2 hours.
For the dressing
In a small bowl, whisk together the honey, juice of 1 lime and vanilla.
With a small grater, grate about 1/2 tsp of lime peel into the dressing.
Add the ginger and mint. Stir to combine.
