Shortcaked tropical appetizer
Those shortcakes you normally use for dessert make a great "bread" for a savory SlimCado® and dragonfruit salad. Perfect appetizer for party-goers to pick-up and enjoy.
Ingredients
- 2/3 cup orange juice
- 2 limes
- 1/3 cup brown sugar
- 1 tsp vanilla extract
- 1 SlimCado
- 1 dragonfruit
- 12 shortcake shells
Instructions
- In a small saucepan over medium-high heat, add the orange juice, juice of 2 limes and the brown sugar. Bring to a bowl then reduce heat to a simmer about 5 minutes. Stir frequently until slightly thick (it will thicken further once cool). Let the sauce cool to room temperature.
- Cut open a SlimCado, discard the seed and scoop out the interior. Chop into small pieces.
- Cut open a dragonfruit, scoop out the interior. Chop into small pieces.
- Sprinkle the SlimCado and dragonfruit pieces over the shortcake shells on individual plates or serving platter. Spoon the sauce over the fruit and shortcake.
