SlimCado peanut loaf
For a breakfast treat that you can fix the night before and then heat up the morning of, this will bring rave reviews. It's kind of like French toast, avocado style.
Ingredients
- non-fat cooking spray
- 1 SlimCado - sliced in half, seed discarded, cut into large pieces
- 2/3 cup peanut butter
- 1 cup oats
- 1 egg
- 3 tbs honey
- 1 tsp salt
- 1 tsp baking powder
- 1 tbs olive oil
Instructions

Preheat the oven to 350°. Spray a loaf pan with cooking spray.

In a food processor add all the ingredients. Pulse until relatively smooth.

Scoop into the loaf pan. Smooth to make even. Bake for 20 to 25 minutes.

Let cool, then refrigerate.

For breakfast, in a skillet over medium-high heat, add the olive oil.

Cut the SlimCado loaf into 1" slices. Add to the skillet and cook, turning at least once, for 3 to 4 minutes.
