Starfruit in papaya sauce
A great way to enjoy two fabulous fruits, starfruit, and Caribbean Red® papaya, this recipe can easily be turned into a dessert by adding a bit more agave.
Ingredients
- 1 lime
- 1" fresh ginger, minced
- 1 cup orange juice
- 1 Florida starfruit, sliced into 1/4" stars; trim off tips and discard seeds
- 1/4 (or 1/2 cup) Caribbean Red papaya, peeled and chopped; discard seeds
- 1/4 cup agave nectar
- 1/8 cup Groovy Coconut, shredded

In a medium saucepan over medium-high heat, combine the juice of one lime, ginger and the orange juice. Stir frequently and bring it to a boil. Reduce heat and simmer contents of saucepan for 10 minutes.

Add the starfruit slices to the saucepan and simmer for another 10 minutes, or until the mixture is slightly reduced.

While the mixture simmering, place the Caribbean Red papaya pieces in a food processor. Process until smooth. Set aside.

Add the agave nectar to the saucepan and stir to dissolve. Remove from heat.

Add the papaya purée. Stir well.

Put purée in 4 individual serving dishes. Top with starfruit slices. Sprinkle with shredded coconut.
