SlimCado and Dragon fruit salad
Do you ever eat so many salads and they start tasting the same to you? Here's a salad that will reboot your salad taste buds. It's light, matching mint's lightness for a great summer salad.
Ingredients
- Dressing
- 1/4 cup extra virgin olive oil
- 2 limes
- 3 tbs fresh mint (plus stems for garnish)
- 1/2 dragon fruit, chilled
- 1 tsp salt
- 1 tsp pepper
- Salad
- 4 cups fresh romaine lettuce
- 1/2 dragon fruit, cubed
- 1/2 SlimCado avocado, cubed
Instructions

In a blender, combine the dressing ingredients. Can be chilled for two hours.*

Divide lettuce between four salad plates.

Top lettuce with fruits.

Serve with dressing on the side or served on top of the salad.

Garnish with mint sprigs.
*For the dragon fruit taste to stand out, you've got to make the dressing and pretty much serve it within a couple of hours. Otherwise the mint dominates the taste of the dressing.
