Uniq Fruit breakfast salad
Fruit for breakfast is always a healthy plus. Tropical fruit blended with cream cheese can add a taste of the tropics that makes breakfast a little extra special.
Ingredients
- 4 oz reduced-fat cream cheese, softened
- 1 cup low-fat vanilla Greek yogurt
- 1/4 cup honey
- 2 limes
- 1 tsp vanilla
- 1 tsp thyme
- 2 Uniq Fruit
- 1 Florida starfruit
- 1/4 cup cherries, pitted (drain juice if canned)
- 1 cup pecans, chopped
Instructions

In a large bowl, cream the cream cheese with an electric mixer on medium speed. Add the yogurt, honey, juice of 1 lime, vanilla and thyme. Mix until light and smooth.

Peel the remaining Uniq Fruit. With a sharp knife, cut off any remaining white membrane. Cut across the width of the Uniq Fruit, making circles. Then slice each circle into quarters. Place in the bowl.

With a vegetable peeler, trim the ribs off the star fruit. Cut into star-shaped slices, and poke out the seeds. Place in the bowl.

Slice the cherries in half and place in the bowl.

Add the pecans, and toss gently.

Cover the bowl with plastic wrap, and refrigerate at least 2 hours.
