Vaquero tropical salad
In Latin America, the cowboy is called the vaquero. No matter what continent the range riders are on, they will want a meal that's mighty tasty but also gets them through their day.
- 1/2 SlimCado® avocado
- 1/2 cup Caribbean Red® papaya
- 2 limes
- 1 7.5 oz. can black beans, drained
- 1 Roma tomato, diced
- 1/4 cup red onion, diced
- 1/2 cup Italian dressing
Slice the SlimCado in half. Discard the seed. Scoop out the flesh and chop it into small pieces. Squirt the remaining half with the juice of 1 lime, cover and refrigerate for another recipe.
Peel the papaya and discard the seeds. Chop up approximately 1/4 of the flesh to make 1/2 cup. Reserve the remaining papaya for another recipe.
In a large bowl, combine the SlimCado, papaya pieces and the juice of 1 lime. Gently toss. Then add the beans, tomato and onion. Toss gently to mix. Add the dressing and toss gently to mix.
Cover and refrigerate for 2 hours or more.
Serve on top of lettuce or in a sandwich. Or make a bold statement and serve in a SlimCado half.
