Radishes, peas and a SlimCado, oh my!
Oh my, what a light and lively salad for summer's heat. SlimCados are the perfect accompaniments in a veggie side.
Ingredients
- SlimCado avocado, ready for guacamole - 1
- radishes, sliced into rounds - 4 small
- feta cheese, crumbled - 2 tbs
- mint leaves, chopped fine - 8
- Sauvignon Blanc - 2 tbs
- peas - 1/4 cup
- lime - 1
- salt and pepper to taste
Instructions
- Slice open the SlimCado and discard the seed. Scoop out the insides.
- In a medium bowl, mash the SlimCado. Add the radish slices, feta cheese, mint leaves, Sauvignon Blanc, peas and the juice of 1 lime. Toss gently to combine. Cover tightly with plastic wrap and refrigerate 2 hours.
- Toss gently before serving.
